Down Syndrome Awareness Month

Since the 1980's, October has been designated as the month to celebrate people with Down Syndrome and make others aware of their abilities and accomplishments.  Once again, we are supporting the Down Syndrome Association of Hampton Roads (DSAHR) by having our Associate Photographer, the awesome Stefanie Ward, return to the Studio to lend her phenomenal portrait skills in support of this fund-raising campaign.  During October, we are donating Stefanie's session fees ($250) to the DSAHR in recognition of what the organization does for our greater Hampton Roads community.  So, if you would like your family or a family member photographed by Stefanie during October, rest assured that you will be supporting a great organization with an extremely important mission---AND receiving an outstanding Legacy portrait created by Stefanie and completed by me, one that will become a treasured family heirloom for generations.  As many of you know, the key element in great portraiture is the connection between the subject and the photographer.  No one epitomizes that better than Stefanie!  You will be amazed!

Here is a quick and easy way to get your

day started: Easy Egg Sandwiches

Time: 20 minutes

Yield: 4 servings

Whether you're on the go or just want something simple, these Easy Egg

Sandwiches are the best way to get your morning going! Grab yourself a few

crunchy, perfectly toasted, and thoroughly buttered English muffins and pile

them with an omelet-like square filled with melty cheese, hearty ham,

crunchy green pepper, and fresh chives. It's the perfect handheld for any kind of

day! Easy Egg Sandwiches are the no mess, low stress bite you need to start off

any day! It's going to be "eggcellent!"

Ingredients

6 large eggs

1/4 cup whole milk

1/4 cup ham, cooked and diced

1/4 cup green pepper, diced

2 tablespoons chives, chopped

1/2 cup Mexican blend cheese, shredded

4 English muffins, toasted and buttered, for serving

Directions

Step 1

Preheat the oven to 375 degrees F.

Step 2

Spray a half sheet pan with nonstick cooking spray.

Step 3

In a medium bowl, whisk the eggs and the milk together until well-combined,

about 2 minutes.

Step 4

Pour the egg mixture into the sheet pan and top with the ham, the peppers, and

the chives.

Step 5

Bake the egg mixture until set and warmed all the way through, about 11

minutes.

Step 6

Transfer from the oven and evenly sprinkle the shredded cheese on top.

Step 7

Bake the egg mixture until the cheese melts, about 2 minutes.

Step 8

Transfer the egg mixture from the oven and cut it into squares.

Step 9

Serve the egg squares sandwiched between the English muffins.
